BALSAMIC CHICKEN WITH GOAT CHEESE AND SUNDRIED TOMATOES


Ingredients

1/3 cup balsamic vinegar
1/3 cup soy sauce
3 Tbsps brown sugar
4 chicken breasts boneless and skinless
4 oz goat cheese crumbles
4 oz sundried tomatoes
fresh basil
Optional: balsamic glaze

Instructions
  1. Whisk together balsamic vinegar, soy sauce, and brown sugar.
  2. Place chicken in a gallon size plastic bag. Pour balsamic marinade into the bag and massage it to coat the chicken evenly. Marinate at least 1 hour or overnight.
  3. When chicken has marinated grill over medium high heat for 5 minutes per side.
  4. Top each chicken breast with goat cheese, sundried tomatoes, fresh basil, and balsamic glaze (if desired)
