SLOW COOKER MOROCCAN CHICKEN



Slow Cooker Moroccan Chicken is loaded with flavor, tender chicken, carrots, pears, Moroccan spices and more for the perfect cozy meal! Serve over brown rice, cauliflower rice or quinoa.
PREP TIME: 10 MINUTES COOK TIME: 6 HOURS TOTAL TIME: 6 HOURS, 10 MINS

INGREDIENTS

2 pounds boneless skinless chicken breasts
4 large carrots, cut into bite sized pieces
1 medium onion, chopped
28-ounce can diced tomatoes
1/3 cup prunes, diced
2 medium pears, diced
3 cloves garlic, minced
2 teaspoons cumin
2 teaspoons paprika
1 teaspoon black pepper
2 teaspoons cinnamon
1 can low-sodium chickpeas, drained and rinsed
5 cups cooked brown rice, quinoa or cauliflower rice
Parsley to top

INSTRUCTIONS
  1. Combine all ingredients in slow cooker except for rice and parsley. Mix well and cook on high for about 6 hours until chicken is very tender and vegetables are soft.
  2. Cook rice, quinoa or cauliflower rice.
  3. To serve: scoop rice or quinoa in bowl and top with chicken mixture. Sprinkle with fresh parsley. Enjoy!
